Fun Facts: | Mangoes have multiple varieties, the most popular being the Tommy Atkins mango – characterized as a green mango with a red blush. The Ataulfo is also known as a champagne mango basically because of its color – generally golden. It is smaller than a Tommy. Keitt mangoes are green and stay green. Although they stay green, they are great tasting when they are ripe. |
Buy: | Mangoes that give a little to the touch are perfect for cutting. Very similar to picking peaches and avocadoes. Color really has nothing to do with flavor as different varieties have different colors, yet can be at the peak of flavor. |
Cutting: | Mangoes have a large seed in the center. Cut ripe mangoes off center to get what is known as a cheek. Slice the meat in the cheek without piercing the skin to desired cuts and sizes. Then scoop out with a spoon. |
Storage: | Store at room temperature until desired ripeness occurs. Store cut mango or ripe mango in refrigeration. |
Uses: | Great as a raw snack or dessert, also great to make sauces and salsa, and can be juiced quite favorably. |
